This simple and healthful guacamole is my staple party dip and does not disappoint. Full of flavor and zest, it brightens any table.

Ingredients

- 3 ripe avocados

- 1 Tbsp finely chopped red onion

- 2 heaping Tbsp finely chopped cilantro

- 2 tsp lime juice (or lemon juice)

- 1 Tbsp finely chopped jalapeno

- 1/2 tsp salt

- 2 cocktail, 1 Roma, or 10 cherry tomatoes, finely chopped
Instructions

- Mash your avocados with a fork until you have a mushy consistency. Add lime juice.

- Add finely chopped red onion and jalapeno, tomatoes, salt and cilantro. Mix all ingredients well. Adjust seasoning as needed.
Notes

- Feel free to use lemon juice if you don't have lime available, but lime is encouraged.

- Make sure your avocados are soft to the touch and ripe.

- Try to stick to smaller, heartier tomatoes with thicker skin and avoid the larger variety as those will add too much liquid to the guacamole.

- Letting the guacamole rest in the refrigerator covered for 30 minutes before serving will allow all the flavors to marry.
