You may be deep into planning for St. Patrick’s Day and I’ll usually share an Irish recipe from a Berks County Living reader. But this year I’d like to share a favorite Green Smoothie recipe.
March can be such a tease. We are stuck between wanting to shed winter’s chill and to start to enjoy spring’s local harvest. Shopping locally grown produce means winter menus often include soups and other shelf-stable goodies from the pantry, like rices, pasta and legumes. As much as I love roasted vegetables and soups, I’m ready for strawberries, tomatoes and fresh herbs!
Smoothies make it easy to get fresh fruit and vegetables into our diets. Adding protein makes this a quick meal substitute. This smoothie needs no added sweetener, Mother Nature has got you covered! Knock out two fruit, one vegetable and a dairy serving with this smoothie.

Green Smoothie

Yields 1 serving
Ingredients

- 1 handful (2 cups loose leaves) baby spinach

- 1/2 small apple, cored and cut into cubes

- 1 frozen banana, cut in 1-inch pieces

- 1 cup low-fat milk
-
- 1 heaping tablespoon peanut butter

- 4-5 ice cubes
Instructions

- Add the spinach, apple, banana, milk, peanut butter and ice in the blender. Blend until smooth.
