Here’s a very basic and easy dressing that takes just minutes to make and requires some very basic ingredients you likely already have in your kitchen.
Ingredients
2 Tbsp tahini
1/4 cup extra virgin olive oil
5-6 Tbsp water
3 tsp lemon juice
1/2 tsp salt
1 tsp maple syrup
Instructions

- Combine all ingredients in a bowl and mix well.

- Store in an airtight glass container in the refrigerator for up to one week. (Make sure it is glass as plastic will alter the taste.)
Notes
1. Be sure to mix the tahini well. Separation of solid and liquid often happens with pure seed and nut butter, but that’s especially so with tahini. It’s a labor of love mixing it but well worth it. I just use a knife to mix the tahini well until all the solid pieces are fully mixed with the oil and you have a smooth mixture.
