Sesame Peanut Noodles make for a perfect quick lunch or they can be spruced up with tofu and vegetables for an easy and delicious dinner.

Yield: 4 servings
Ingredients
- 12 oz. noodles of choice (ramen, rice or spaghetti)
- 5 Tbsp no sugar or salt added peanut butter
- 3 Tbsp coconut aminos
- 2 Tbsp coconut oil
- 1.5 Tbsp toasted sesame oil
- 2.5 tsp maple syrup
- ¼ tsp sea salt
- 2 tsp sesame seeds for garnish
Instructions
- Cook the noodles according to package instructions.
- In a large bowl, combine peanut butter, coconut aminos, coconut oil, toasted sesame oil, maple syrup and salt. Whisk until smooth.
- Toss with cooked noodles.
- Sprinkle with sesame seeds before serving.
Notes:
- For a nut-free version, use tahini instead of peanut butter.
