This delicious white bean stew with shrimp and chicken sausage bursts with flavor, making it perfect for a healthy weeknight dinner for the whole family.

Ingredients:
- 2 Tbsp extra virgin olive oil
- ½-pound shrimp
- 3 chicken sausage links or about ½-pound
- zest from half of an orange
- 2 Tbsp orange juice
- zest of 1 lemon
- 2 large shallots or half of red onion, finely chopped
- 1 garlic clove, minced
- 2 carrots, grated
- 2 cans of drained cannellini beans
- 1 fennel bulb, sliced
- 1 tsp ground coriander
- 1 tsp ground cumin
- ¼-tsp smoked paprika
- ½-cup dry white wine (you can use broth instead)
- 2 cups low-sodium chicken broth
- 1 Tbsp fresh dill, finely chopped
- 1 Tbsp fresh tarragon, finely chopped
- 1 Tbsp vegan butter
- optional: ½-tsp red pepper flakes
- ¼-tsp freshly ground pepper
- ½-tsp salt divided
Instructions:
1. Combine spices, orange and lemon zest along with 1/4-tsp salt and pepper. Coat the shrimp with half the spice mixture. Reserve the rest.
2. Preheat a large skillet on medium heat. Add 1 Tbsp extra virgin olive oil and chicken sausage and cook until it's browned and cooked through (about 5 minutes). Add shrimp and cook for 2-3 minutes. Remove chicken sausage and shrimp and set them aside.
3. Add 1 Tbsp extra virgin olive oil, shallot, shredded carrots, sliced fennel and garlic. Cook for 5 minutes until the vegetables are soft. Deglaze with wine.
4. Add the beans, broth, orange juice, reserved spice mix, salt and pepper. Cook for 10 minutes until everything is incorporated and soft. With a potato masher, mash some of the beans.
5. Return chicken sausage and shrimp to the pan along with vegan butter, tarragon and dill. Adjust salt and pepper to your liking. Optional: stir in red pepper flakes.
6. Serve with extra dill and lemon zest.
Notes:
1. You can soak and cook your own cannellini beans or use canned beans.
2. A good substitute for cannellini beans is great northern beans.
3. You can use cooked sausage or uncooked.
4. If you skip the sausage and shrimp, this recipe could be vegan.
