Spicy Lime and Ginger Salad

Yields 4-6 servings
Salad ingredients
- 1 cucumber, spiralized
- 1 carrot, spiralized
- 1 yellow squash, spiralized
- 1 cup shredded red cabbage
- 1 cup sliced red pepper
- 1/2 cup slivered almonds or sunflower seeds
- 1/3 cup chopped cilantro
- 1/4 cup chopped green onions
- 1 tablespoon sesame seeds
Dressing Ingredients
- 1/4 cup rice vinegar
- 3 Tbsp extra virgin olive oil
- 1 lime, zest and juiced
- 1 Tbsp agave syrup or honey
- 2 tsp freshly grated ginger
- 1/8 tsp cayenne
- Salt and pepper, to taste
Instructions
- Combine all of the salad ingredients in a large bowl.
- Prepare the dressing. In a small canning jar combine the vinegar, oil, lime juice and zest, syrup, ginger, and cayenne. Cover with tight fitting lid and shake to combine; season with salt and pepper.
- Dress the salad to taste and serve.
