The sausage is the real star; you won’t need to add more flavors. I found help selecting a sausage flavor from the owner of Freeland Market. Based on the recipe I had in mind, we settled on the Smoked Hungarian Sausage.

Autumn Harvest Stew

Ingredients

- 2 Tbsp extra virgin olive oil

- 1 small onion, chopped (1 cup)

- 1 Tbsp chopped, fresh garlic

- 2 links (14 ounces) Freeland Farms Smoked Hungarian Sausage, sliced

- 1 bunch kale, stems removed and chopped (6-8 cups)

- 1 (14.5 ounce) can diced tomatoes

- 1 (8 ounce) can tomato sauce

- 1 cup lager-style beer or broth
-
- 3 cups low-sodium broth

- 1/2 cup dry rice

- 1 medium potato or sweet potato, cubed (2+ cups)

- 1 tsp salt

- 1/2 tsp ground pepper

- 1/2 cup chopped apple
Directions

- In a large stock pot (3 quarts) over medium low heat simmer the onions with the olive oil until tender. Add the garlic and sausage. Cook for 3 more minutes.

- Add the kale, tomatoes, sauce, beer, broth, rice, potatoes, salt and pepper; stir and cover. Bring to a boil. Reduce to low simmer.

- Cook for 20 minutes. Add the apples and continue to cook for 10 minutes.
