Yields 6 servings
This cocktail can easily substitute a mimosa for the holidays and brunch. Swap Grapefruit San Pellegrino for grapefruit sparkling soda, if you prefer.
Rosemary Simple Syrup Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 2, 4-5 inch fresh rosemary sprigs or 1 Tbsp dried whole rosemary
Cocktail Ingredients
- 1 1/2 cups grapefruit juice
- 1/4 to 1/3 cup Rosemary Simple Syrup
- 3/4 cup vodka
- 1/3 cup pomegranate liqueur
- 1 can sparkling grapefruit soda
- Fresh rosemary to garnish
Instructions
- Prepare the Rosemary Syrup. In a small saucepan over medium heat, simmer the water and sugar until the sugar has melted. Add the rosemary, turn the heat off and allow to cool. Strain the rosemary and discard. Store in the refrigerator for up to 2 weeks.
- Combine the grapefruit juice, syrup, vodka and pomegranate liqueur in a pitcher; stir well. Add the sparkling soda, stir and serve over crushed ice.
