Cook Time: 15-20 mins
Ingredients
- 3 cups raw mixed nuts of your choice (I used almonds, pecans and cashews)
- ¼ cup maple syrup
- 1 Tbsp coconut sugar
- ½ tsp cinnamon
- ¼ tsp (or more) cayenne pepper
- ¼ tsp ground coriander
- ¼ tsp cardamom
- ¼ tsp salt
- 1 egg white
Instructions
- Preheat oven to 350 degrees.
- Add all the nuts to a medium bowl.
- In a small mixing bowl, whisk the egg white until frothy. Discard about a quarter of it.
- Add the rest of the ingredients along with the egg white to the nuts and make sure they’re well coated.
- Scoop coated nuts onto a large cookie sheet (leave behind any additional coating) and roast on the top rack until crispy and fragrant – about 20 minutes. Stir once after 10 minutes.
- Let nuts cool completely before serving.
- Store in an airtight container for up to a week.
