Royal Tea

- Cocktail strainer

- Coupe glass
Ingredients:

- 1.5 oz Courvoisier Cognac

- 1 oz Earl Grey tea syrup (simple syrup with a bag of Earl Grey tea that’s been steeped for 4 minutes)

- 3/4 oz fresh lemon juice

- 1 egg white
-
- 2 oz champagne
Instructions: Combine cognac, tea syrup, fresh lemon juice, and egg whites in a shaker. Shake vigorously, without ice, until the egg white emulsifies. You are looking for that creamy texture. Next, add ice and shake to chill the liquid. Double strain into a coupe glass. Slowly pour champagne on top. Garnish with a small pinch of Earl Grey tea leaves.
*Special note: This cocktail needs to be dry shaken to whip the egg whites to create the creamy foam. All ingredients (except champagne) are shaken without ice for about a minute or until ingredients are mousse-like in texture.

Kyle Delp started bartending part-time in 2000 at a local Italian restaurant when she was 18. She obtained her license from Allentown Bartending School in 2003 and has been bartending full-time ever since. Says Erika Shifflett, “My mother was in the industry and was the one that taught me about bartending. I started when I was 18 and worked at a few local restaurants until I found my home at Willoughby's On Park three years ago.”
Pair it With… Explains Erika, “What is great about this cocktail is that you can pair it with a variety of our menu items. You could start with our charcuterie board or finish with a chocolate cake. The Lamb Rack is a great entrée to pair with this cocktail.”
