Flavors of caramelized sugar, graham cracker, chocolate and smoke are packed into a cocktail where Bourbon provides charred wood notes, and the bitter nuance of cocoa nib-infused Tequila balances the sweet creaminess of the marshmallow. This is a spirit-forward, flavor-packed seasonal cocktail! By infusing the spirits and syrups with authentic flavors, we can keep the simplicity of a classic Old Fashioned recipe but swap in spirits, sweeteners and bitters that carry unique and different flavors.

Most would agree s’mores are a favorite no matter the occasion, and this cocktail brings all the nostalgic flavor elements together into an adult experience.

As part of the opening crew in 2016, Decker has bartended at Fork & Ale in Douglassville for almost 7 years. It is where he first learned to make cocktails. Says Garit, “Since then, I have developed my own style and have become inspired to create variations based upon classic cocktails. My mixology is driven by balancing and using fresh, seasonal, and sometimes unusual ingredients. I love how this cocktail reflects fall, which is my favorite time of the year!”
Recipe: That’s S’more Like It Old Fashioned
Ingredients
- 1.5 ounces Bourbon infused with graham crackers
- ½ ounce Reposado Tequila infused with cocoa nibs
- ½ ounce toasted marshmallow syrup
- 8 dashes chocolate bitters
- Ice cubes
- Marshmallows
- Chocolate sauce
- 1 pack graham crackers
- ¼ cup organic, high-quality cocoa nibs
- 2 cups water
- 1 cup sugar
Tools Needed
- Mixing glass
- Mixing spoon
- Wide-mouth jar with lid
- Kitchen or bar torch
- Strainer
- Skewer
Instructions
To Make Graham Cracker-Infused Bourbon
Take pack of graham crackers and one 750ml bottle of your favorite Bourbon and crumble graham crackers into small pieces and soak with Bourbon in wide-mouth jar with a lid for 24-48 hours. Shake occasionally/strain through very fine mesh strainer or coffee filter.
To Make Cocoa Nib-Infused Reposado Tequila
Add ¼ cup cocoa nibs to a 750ml bottle of your favorite Reposado Tequila and sit for 24-48 hours, shaking occasionally, then strain.
To Make Toasted Marshmallow Syrup
Toast a dozen marshmallows with a kitchen or bar torch or under the broiler. Take 2 cups water and 1 cup sugar — heat and dissolve water into sugar, add toasted marshmallows, stirring over medium heat until dissolved. Strain if there are any black char pieces.
Put It All Together…
Combine all ingredients in a mixing glass and add ice cubes and stir with mixing spoon for at least 15-20 seconds. Pour through strainer into old fashioned glass over fresh ice. If available, a large cube for serving is preferrable. Garnish with skewered toasted marshmallow, and/or chocolate sauce rim dipped in graham crumbs.
Tips
When making this drink, or any craft cocktail, remember to measure according to the recipe, and you will always have consistent tasting. Fresh ice is a must! Cleaned and polished glassware is also sure to impress. Do not skip the bitters in cocktail recipes! They are vital for balancing sweetness and acidity. Most important of all, make sure to have fun as you make this cocktail or any other drinks you design.
